Anyone have any ideas of sprucing up store bought spinach dip? My joyful coworkers planned a potluck and well I got stuck with dip. I'm going to have to buy some from the store (it's a staff favorite) because I'm not going to be able to prepare anything.

I love the Knorr package dip. If you have time, it is quick. Mato, sour cream, the package, spinach and water chestnuts.

If not, Id get the store one. Add a can of waterchesnuts. Round loaf of bread and cut the top and serve in a bread bowl

Omaha steaks.

Is it worth It? I got a coupon and was looking through the website. My kids eat a lot of steak. Very little pork or ch x, but steak is so expense. I dont live close enough to buy half a cow or anything like that.

Budget wise they get steak like one a month. I buy London broil bc it is cheaper throughout the month. I hate London broil though. To chewy

Its rare for us to have steaks too.
Hub usually splurges once a month or so and gets a large *flat* of them from costco.
(cant remember what kind of steak it is tho....) I will cook three and freeze the other two for a time when son isnt home or I have leftover other stuff and my son and I will split one of them.(they are huge anyways)
Ive never done the omaha steaks.

I finally made TACOS!!!
Found all the ingredients in my local supermarket and I stuffed myself with 3 shells incl. ground beef + cheese + sour cream + salsa now... burp...
YUMMY!!!

They are good but price wise they are expensive!!! I buy steak fairly often as it's cheap for one person. I love rib eyes!!!! But I try not to eat much meat of any kind as it is hard on my stomach. But if I am going to get sick I'd rather get sick on a good steak then a crappy tough one!!!

So after three nights of spaghetti, Im ready for something new. (note to self....stop using the whole package of noodles you dont have an army any more lol)


Gotta think of something for dinner tonight.
Want a pot roast but dont want to make one. Seeing if maybe fish might be on the menu. Of course I'll have to go buy some. I wont freeze fish and do not like to keep it more than one day in the fridge if we do buy some. Usually cook same day I buy it.


Ive never cooked clams. Maybe today is the day. Im sorta scared to cook them. I heard this talk show guy talking about how his wife cooked them one time and broke down crying. She didnt know they were alive and when she looked in the pot of boiling water and saw them opening and closing she got sad.
I think if I'd seen that I'd have freaked out too. ug.

With clams or mussels, you need a good brush to scrub them. If you don't, your recipe with be gritty with sand.

Put your clams/mussels in water with a little corn meal in it and a little salt. Let them sit there overnight. Then the clams will be internally clean. The mussels - get yourself some pliers and pull that little hold-fast in the center of the straight side right out! Then steam them in whatever liquid you want - tomato sauce, white wine with herbs, whatever. When they're done, they will be open. Throw anything that hasn't opened away.

Well I bailed on the fish dish. Too chicken. lol.


Instead I went to the local grocery store and bought a brisket. Ive never done one before so I thought I'd try it.

super easy, tho it did take a while. seared then into the oven at 350 or so for 3 hrs.
Someplace at the 2 hr mark, I added carrots and potatoes. (also added tomato paste when it first went into the oven)
YUM>


I think next time I'll add more veg. Maybe add celery, and more onions.
Good dish to make and leave cook away especially if its cold. Yesterday was really overcast and cold most of the day until the fog lifted for a whole 2 hrs or so.........
So this was a good dish to make while hanging out inside.

Lunch at work is becoming expensive even with our decreasing employee discount in the cafeteria. I'm going to start putting my crock pot to use, sandwiches are becoming mundane and I need more options.

How do you feel about left overs? When I make rice, I make a lot and can add almost anything to it. Salads change it up a bit.

I want to start meal prepping and putting it in the freezer and take out as needed.

There's usually not much left. Also, I work nights so I try to eat as light as possible if I don't get to eat at a reasonable time during my shift. There have been many nights I'm not able to eat before 3am.

On one of your days off, can you make a bunch of grilled chicken or bakes chicken? Soups can also go along way and you can freeze what you don't eat.

I'm chickened out. With me being the only cook, it's my go to dish when I'm off...baked, oven fried, rotisserie, and that's stretching it so I alternate with turkey. I have a staple list of foods that I prepare but carrying those leftovers for lunch messes with my diabetes so I have to be careful. Going back to trying the crockpot dishes another resort. I'm always searching Pinterest for ideas.

I am diabetic also, it's horrible trying to manage if your doing all alone as far as cooking. I try to cook stuff that's good and filling, but low carb at the same time. I also have really bad stomach issues so I'm always scouring cook books and read online all the time for recipes that I can do small meals with. LOL like with anything I tend to go overboard but I will tell you I eat a lot of soups, like tomato florintine it's great and I feel good and generally can fill up on this.

Yeah Labor Day weekend!!!! No party to go to. I'm so bored and been really depressed about stuff I need to get out of my funk!!! Got a bunch of baking supplies. I'm doing butter cookies today to ship over night to my Sister, she having her first treatment. I'm making ones my Mother used to make that took the patience of a saint (which I'm not) so I just hope they come out 1/2 as good as my mothers.

We went down to my folks yesterday. Hub rode his bike (??!! crazy man)
and I drove down in the car. Lucky in that traffic was pretty light considering its a holiday weekend.
I brought steaks to bbq, a packaged salad (omg such a good one!) some of the spicey mac salad and corn on the cob.
My youngest sister came by later on and we shared a steak. (they were huge)
It was nice for a change that we came down and cooked for them. I know my dad loves a good steak. And mom loves salad.


So tonight its gonna be chicken again. I got this new rub for the steaks that I think I will try on the chicken as well. And of course bbq.

MIght try my hand and recreating that mac salad too. That will require a store trip but thats ok.

My kids were away for a week and I ate out or made pasta. I hate cooking for just myself.

I have to or I am going to be as big as a house!

Well I didn't bake this weekend . I did make Steak for steak, onion & cheese Subs. And ate lots of fruit. I have a Drs appointment first thing this morning at 7:15am. So I went to bed really early. I was kind of bummed out about my sister so I just stayed home reading. All two of my friends were away!!!LOL (SERIOUSLY) I have to find something to do and meet some people. I did do some shopping. Mailed out a package (sisters birthday gift). I really miss being near family around the holidays, now that I feel like I want to celebrate them. Anyway I bought stuff to make buritos today!
