I bought myself a cast iron skillet the other day. Had not used it yet.
I think I really really like it.

I had one with the grill lines in it, but really wanted a flat one.
I decided I needed it.
So last night I did chicken (AGAIN!! Sick of chicken for a while) and it came out nicely.
Seared it in the pan and poof, in the oven to finish off.
Pan cleaned up pretty nicely too. I used a ton of paper towels but so what.
The skin really crisped up nicely on the chicken.


Looking forward to using it again on some other meats.

So what is one to cook/eat when it's almost 100°F and no A/C? My flat is really warm and my fan on high-speed whenever I'm home... I'm hungry when I get home and I cannot keep ordering junk food

I have one that's huge!!! I always hated them because of my crazy cleaning stuff but I just clean it like I would anything else and re-season it and store it in a disposable plastic bag. I know that's a PIA to most but I break it out about once a month. I'd use it more but it is so heavy I have a huge problem lifting it and I really can only use it when my hand is good.

yeah its heavy. But I did get one with the gripper on the opposite side of the handle so I use both to lift. Otherwise I couldnt do it.
Got it at Target.
I thought I had a lid for it at home. Turns out that is for a smaller pan. (of course)
That lid is so old! Cant remember where I got it, but its not cast iron. But it works when I cant find the other lids for two of my pans.

Oh well.

What's the idea??? I'm doing a shrimp salad today for lunch them this killer pork tenderloin with apples and wrapped in bacon. No idea on sides, maybe german potato salad?

Could someone come over here and cook for me too, please? I just spent four hours in the sun and now I'm sitting on my balcony after shower, enjoying the breeze...completely worn out thinking I should get up and start preparing my chicken.

Nooooooooooo.....I am too tireeeeeeed.

Well, I have this really good and easy recipe for an Italian pasta salad with tomatos, mozarella, argula, thunafish, capers and a chili-olive oil. It has to sit overnight for zest to come through but also eaten freshly made it's good...

This sounds delish!!! I do a similar one with spinach, pepperoni, mozzarella, assorted veggies, always a big hit and can be served cold hot or room temp!!!

Thinking some ravs tonight.

I totally jury rigged dinner last night.

Took a box of rice a roni (spanish) and added the leftover chicken (bite size pieces) added a can of diced tomatoes, a bit more rice (white) and a can of corn (drained) and some shredded cheese,some cilantro, sour cream (large tablespoon) and some cumin.

Viola! dinner.


Hub and son said it was yummy. I thought it was meh.


Gonna have to ask hub to go back to the store. All we have is chicken and im sick of chicken.

I had soup and a cut up tomato!! What a boring dinner!!! I just went to pick up some mayo, bread, coffee. I am still on budget mode so far only spent $8.31 on groceries!!! I'm good for at least a week!!! Total for month is $87.31 but that doesn't include dog food or her cookies. I am so psyched about this I am kind of good at being cheap with food shopping!!! I am doing the pork tonight can't wait to eat it!!

by the way... I caved yesterday and ordered food... got 2 portions of Chinese dumplings which will last for 2-3 meals... Love them and ate one portion
But cooking today... in the oven as we speak...

But did you know that wine does not taste good after a professional teeth (or tooth?) cleaning? just got back form the dentist and poured myself some chilled rosé and it tastes AWFUL!!

Found some hamburger in the fridge. Thank God I wont have to make chicken again.


Now to figure out what to make. lol.
Leaning toward spaghetti. Its easy and there will be leftovers.

Oh I remember that sooooo well! My son played football, lacrosse and wrestled...it never stopped (unless they dropped him a weight class and he had to eat nothing but carrots and celery to make weight).

OMG yes. My son also wrestled. They would put him in the 152's then flip him to 145 (?) then back up. He often wrestled up.
But when it was finals time, holy moly tht kid would live on lean cusines. Or air. I swear.

So glad he didnt end up at state. ug. Especially since hubby was locked up at that time. So stressful.


Well, I went the spag route. But used Penne noodles. Yum.

I'm making a pasta Antipaste Salad, seems to sound good it was so hot yesterday and I just couldn't cook, I ate cold pizza my neighbor brought over!!!

I made a hamburger and had the antipaste also, turned out great!!! I'm still doing the food budget. I think I can realistically get my food budget down to about 35-50 a week. I'm serious about this and I love that I am sticking to it. I want to get a new car next year and if I can save about $2000. plus sell mine for about $2000. I'd have a decent down pymt. I want another SUV, I really need it here the roads are really bad here and 4WD is always a good idea. Very excited about how good I'm doing with money when I try to budget. I spent $50 last night and that was for all drinks for the month, some ice cream, stocked up on coffee creamer(month worth) Canned tomatoes and so meats. I hit a great sale spend 25. 5 dollar off coupon. did that twice so I really got $60 in stuff for $50. Got pepsi $2 for 6pk of16.9oz Bought 5 6pks!! Would have bought more but they didn't have any more. Anyway it fun seeing just how cheap I can eat for and still eat decently. LOL I have to laugh because when Andy was home I would spend $300 a week easily on food. Now I'm trying to only spend 1/2 that for a month!!
