For Christmas I got this cookbook and I love it! I love easy and quick recipes and I needed more inspiration. I hate cooking when I get home from work but this way I've been doing this a lot more often.
Just a recommendation...

I saw a recent (to me anyways) episode of Pioneer Woman and she was showing how to make dinners with 5 ingredients as well. I dont know if she's got those in a book or not, but maybe online.
Maybe she does have them in a cookbook, I dont know but I liked the idea of 5 ingredients.
I'll have to check out the book above

hope you feel better really soon, XOLady!

Here is a quick easy 3 ingredient crockpot recipe:

cut polska kielbasa into chunks (4", more or less)
quarter red potatoes
add refrigerated bag of sauerkraut
add water so it doesn't burn

set crock pot on low. when potatoes are done, it is ready to go.

I do the same just use cabbage, and a 1 can of beer. I love cabbage and its great for you!!!

LOL of course that goes with out saying!!!! Barbie is finally able to have a beer been two weeks and I am ready!!! The beer actually kills the noxious odor of cabbage!!!LOL

I've never thought cooking cabbage smells bad and I make it often.

I am thinking about making gumbo this week, but I am trying to figure out how to make a smaller amount. The last few times I made it I got tired of it long before it was gone.

That's my biggest problem all the time, I freeze a lot of stuff. But mainly if I make a big pot of stuff I give most of it away. I made chicken Cacciatore yesterday. Today I'm going to debone the meat and freeze single portions. I couldn't eat a whole chicken thigh and a small portion of spinach! I'm glad for the tiny appetite but I have a ton of leftovers and I don't want to keep eating the same stuff over and over. I didn't even make noodles with it, pneumonia has been great for losing weight!!! Not exactly the way I planned but I did need to lose about 20lbs. I'm down 10 and still losing!!!

Yeah, I share too when I make stuff like soup and I am trying harder to remember to eat stuff I freeze, but usually once it goes into the freezer I forget about it.

The last gumbo batch I did freeze some and did eat it all - gumbo freezes well.

omg he's hilarious. He films himself watching a cooking show and criticizes the food.
I think Ellen has had him on her show before. ( I saw clips on fb of this)

I love cooking all types of food ... to me ... the best 3 ingredient meal is Corned Beef n Cabbage ... sounds like 2 ingredients but i chop up an onion to mix in as well. Basically shred or chop the cabbage ... sautee a chopped onion ... add in a can of corned beef (just break it up with spoon ... then add your cabbage in a large pot til it starts breaking down and cooking. Its absolutely delicious ... dont put more than a cup of water or so when its cooking ... dang guess water makes it 4??

My favorite "not so easy but worth it" dish is a type of jerk chicken or pork but toned down so regular folks and even picky folks in your family can eat it.

If you have cubed pork shoulder its great ... if not use boneless skinless thighs chopped up. Use jerk seasoning liberally over the meat and sautee it to brown the outside in a little oil and then move it to the crock pot. Cut up at least one or two onions & green bell peppers .. sautee them in oil with jerk seasoning on the veggies as well til translucent and add to crock pot. Finish it off with 2 cans of cream of chicken or mushroom ... add a cup or cup and 1/2 of water and let it cook on high 4 hrs or low for 6-7 hours. Serve it over white or brown rice ... its amazing and not too spicy ... you can add additonal jerk to the crock pot if it tastes too bland ... but wait til its almost done to taste for that ... it builds up.

I love corned beef and cabbage. I use the bagged kind thats already seasoned with the spices tho. I add carrots, potatoes and celery as well. So good.
It smells soooooooo good when its cooking. Usually use the slow cooker too.

yes you can add additonal spices ... but to me the corned beef is seasoned pretty well already so other than a little salt and pepper ... i just keep it simple.

It might be a little bland for some but if you have more than a few picky eaters ... they will love it. And oh so easy!! Crockpot works great too as you said ... i love smelling up my house lol.

OMG I love corned beef and cabbage, I add a can of beer, and a can of tomatoes, carrots!!! I almost bought one but it was like $28 and it's just not in my budget right now. I don't eat any canned meat to much salt and I have to watch my blood pressure. I always wondered how the canned tasted, my friends husband used to make a dip with a can of corned beef shredded and cream cheese and chives diced very tiny. It was awesome except he served it with rye bread the mini ones and I don't eat rye, (I only drink it)!!LOL
