I made curry for the first time today, I cannot believe how well it turned out. Curry powder is my new thing. Still addicted to overloading my food with paprika and cayenne pepper too

I have only gotten to like curry again, recently. A long while ago I got a stomach bug and could not touch curry again for years.
Only problem for me is.....I think Im not using enough of it. (of course if I followed a recipe it would probably be better.....lol)


I should make a trip up to this spice shop and check it out. I think you can smell, look see what each spice is like. I think its called, Penzy's spices.
That will be on the agenda for next year to make a trip up there.

I just cooked myself a great piece of steak and now my glasses are all greasy.... I hate that...

Woah I wish I had something like that spice shop near me! Spices can be so expensive I tend to only work with a few at a time and they’re really intense flavours. I almost never use exact recipe measurements, so just taste it as a go along and try to factor in how much water will be lost during cooking so I make sure it doesn’t have too much spices.

I made a pork roast for Christmas. Had leftovers yesterday.......


Thinking of making some chili or some such and adding the rest of the left over pork.
Now to decide if Im gonna make it, and if Im gonna use dry beans or just by some canned ones.
I have the tomatoes (canned) and some of the spices, a crap ton of garlic (hub did a costco run on the 24th and bought a huge bag of it.....)


What do you all think? dry or canned beans. (if I do canned I'll get a few cans of black, and red beans.....)

I always mix my beans for chili - red white black! Don't you have an Instant pot? Perfect place to do the dried beans!

Hello PTO fam! I have the easiest crock pot chili recipe. I actually put a pot on when I woke up this morning & it is filling the house with an amazing aroma! My Hubby & my kids love this recipe & request it often:
1 -48 oz. jar fully cooked great northern beans
2 -10 oz. cans chicken breast meat
1 -16 oz. jar salsa
16 oz. Mozzarella cheese
*i add a pinch of black pepper, a dash of hot sauce, and 1 teaspoon each of minced garlic & chopped onion.
Cook on Low in your crock pot for 4 hrs. stirring occasionally.
**some good stir ins we add to our individual serving bowls: sour cream, toasted tortilla chips, avocado.
Enjoy! ; )

I ended up going to the store and buying canned beans. White, black and red.

I'll wait to add the pork so it does not get over cooked.
(also got fresh cilantro and some sour cream...)
and I have some shredded cheese if anyone wants that too. lol
(me? I just want the cilantro)
I put it on the stove in my cast iron dutch oven on low. ( after browning the onion, and garlic)

Yeah, I'd thought about that. I just went and put it on super low and would give it a stir every so often.
Just before everyone was to arrive I went and cut up all the leftover pork roast and added that.


Came out YUM!


Next time tho, Im gonna get some *fresh* dried beans and make from scratch.
Thats prolly when I'll toss it in the oven after a bit.


God I love that pot. its heavy as hell but it sure holds the heat just perfect.

Has anyone heard about a *foil hack*?
Something popped up on fb about it. One of the hacks, I recently tried.
Wrap foil around bunch of bananas. (around the top portion that is holding them all together) Its supposed to keep them from browning a bit longer.
It seems to be working! Got a bunch of bananas last week. They are still almost all yellow, not brown or spotty!
Cool hack!






So today, hub wanted me to cook a leg of lamb. (boneless)
So that will be on the menu today. Probably make some more roasted root veg to go with.

Well I am back from NY, I went to help out my sister and niece. Everyone was glad for the help. I cooked and cooked and cooked!!! But boy did I enjoy my time there. I love that you can actually buy decent food at any corner deli!!! I didn't realize how deprived I've become!!! Most of all I just enjoyed spending time with my family!!!

Im looking forward to exploring new things this year. (I finally retired!)
My leg of lamb turned out good, even tho I thought I had messed it up
I mis read the temp for the oven. Only had it at 350 for an hr to start. lol
It should have been 450.
So it took longer once I realized the instructions said 450 not 350.
I ended up bumping the temp and cooked it for an additional 40 min or so.

Congrats on retiring!!! Long overdue I'm sure!!!
I love lamb had it a few times up at my sisters. Her husband eats just about everything raw so me and her would have to finish cooking our food!!!LOL I actually learned a few things short cuts or hacks while up there!!! I made spinach and cheese stuffed shells which they all declared the best ever. I'm thinking they never had homemade before!!!LOL My sister actually gained weight while going thru the chemo, and the tumor shrunk enough to remove. Thankfully the cancer hasn't spread to lymph nodes, but she still has 16 weeks of radiation to get thru. I may go back for feb & march to help her out. Mean while I am trying to get all my medical crap done for the next few months. I hate how medical care has gotten so f-ing stupid due government control. I'm hoping my new pain management can handle my situation. But I doubt it, they all want you to become an addict. I'm never going to get physically or mentally addicted to anything besides cigarettes, that's bad enough!!!

Ive been thinking of making some of those stuffed shells too.
Also got an idea for making ravioli lasagna! (gonna cheat and use store bought ravs)
Costco makes one premade that you just heat up but thinking hey.....can do that!
Maybe next week, we shall see.

LOL that's not cheating it's being smart!!! My sisters husband loves Costco's lasangna, he say's its the best he ever had!!! I've never had it so I can't say. I prefer my own as I can adjust ingredients like salt to my diet.. I have the time and usually the energy to make homemade stuff, but I do cheat when it comes to Ravioli!!!

I think it was last year or so, Costco came out with the ravioli lasagna. The ravs are much larger than the ones I usually see in the stores.

omg its so good. Ravs are cheese ravs.
I might mix it up a bit and look for some with spinach or maybe I'd add that to the dish.

I don't have Costco here the closest big box store is Sams Club, and its not close to me. I wish they did have Costco or BJ's I love both. I kind of love shopping in those type stores. I have a bunch of errands to run today and am not in the mood. My transmission is leaking bad and I can't afford a new car or to fix what I have. I'm sick over it I live in such a rural area and just about everything is a 50 mile round trip. I'm going to have to start looking for a place closer to things.

Ug! That stinks. (the car trouble)
MIght you be able to lease one? (I know not the best idea but it does seem cheaper) and might be better than moving to a new location.


That said being closer to shopping is a good thing. We have a rather expensive store around the corner from us. I dont normally shop there for most of my food, but its close so if I need something, I can walk to it.
The rest of the stores are only a few miles away. (so lucky there)


gaaaaaa car trouble! I am sorry. My son just leased a vehicle due to his old one, having a dying trasmission too. He kept it going (sort of) by adding the fluid often.
Im glad he finally bit the bullet and got a new one. I worried alot with him traveling to work in the old one. He used to pray he didnt have to stop at a red light due to how hard it was for the car to change gears (automatic transmission)
