Well hub was off yesterday so he was supposed to take out chicken. I walk in after work and he says......I forgot to take out the chicken.
Soooooooo He sits around with me for a bit (hahaha, watching food network)
And decides to go to get a pizza.
Son walks in after getting off work, and drops his stuff, walks into the bathroom and tosses his cookies then right to bed.
great.
So now we have a ton of leftover pizza. Guess whats for dinner?

Last night was frozen pizza!!! Only pizza you can get here is from the gas station and is awful!! So frozen it was!!!

We almost did frozen pizza too.
I usually like to add more cheese and veg to them but hub was set on Costco pizza.
Its big, delicious and hey........I didnt have to cook!

It's a spaghetti kind of night. I'm cleaning out the freezer and refrigerator and there's frozen ground turkey and a box of frozen garlic bread sticks, that will do.

I made a huge baked ziti dinner which I will be freezing most. I had so much cheese to use or have it go bad, so I decided to cook. But it's so hot here I don't even want to eat anything hot!!! It tasted great just to heavy such hot weather.

So here are the ingredients for the mac salad.
Macaroni
Pickles
Green onion
Pimentos
Best foods mayo
Tapatio hot sauce
I really really like this mac salad.
Dont know the amounts but guessing its pretty standard for a mac salad.

Yeah, its gonna be hot today and tomorrow.
Not sure yet what Sunday will look like. Its hubs birthday so hopefully it will be nice.

For him a happy birthday would be a long bike ride.
lol. As usual.
Its ok by me. I'll just try to fix a nice dinner. Probably have to make a cake.
But I hate baking. Maybe I'll just buy a cheese cake. He love his Costco cheese cakes.
only trouble is, we have cake for days and days. I dont really eat cake too often. So him and son pig out. lol. Might be good for son. He's just coming off a tummy issue.
(possible food poisoning. Probably from eating out last Sat night)

I just made some pasta with a really easy recipe... Jamie Oliver 5 ingredients... Capers, Tuna, Tomatoes & Oregano, that's it. YUMMY!!

I make a no-bake cheese cake it's super easy. 1/2 tub cool whip, 2 bars cream cheese, 1-2tsps vanilla X-tract, 1/4 cup sugar whip it really good pour into a graham cracker crust, set in fridge for a few hours. I like to put fresh sliced strawberries but it's nice plain also.

It sounds delish but where I live buying any fresh fish is not realistic!! But I think I am going to try to do something similar with shrimp, served cold. Right now it's so hot here even the bugs are exhausted!!!LOL

For the tuna, particularly with pasta, I use a ton of garlic, a few red pepper flakes, Oliver's ingredients. Sauté the minced garlic until it's turning brown and getting crispy, then throw everything else in. I throw the tuna in with its water or oil (either one works, and make sure it's the really cheap tuna that is shreds). Ladle over pasta, or add a little white wine and then ladle out.
It makes cheap tuna absolutely wonderful, and very, very filling!

My combined lunch & dinner today; a bag of sour cream & onion crisps, a donut and a pint of Ben & Jerry's Strawberry Cheesecake ice-cream.

I made sliders, but have a ton of the burgers left over. I guess I coulda gotten away with only a lb of burger meat.
Oh well.
Tonight Im probably gonna bbq hubs steaks he got. Yum.

I went thru my freezer and had steaks I needed to use so I broiled them ate 1. Then I ate some french fries. So today I am finally going to make fried rice. I have chicken, shrimp, pork marinating. I bought all the veggies to do it the problem for me is I always make too much food. I feel bad wasting stuff but here where I live most of the people look at me cross eyed when I ask if they want something I've made. Except my next door neighbor she thinks anything I make is great. We had like a lightening strike it hit a tree blew out my internet, nextdoor ladies phone(land line). My car wouldn't start so even if I wanted to go out I couldn't.

wow.
We do get lighting once in a while but not this time of year.
We have a week old fire that flared up yesterday, and another one in a county. It was blowing smoke all the way down northern CA.
Weird because at first (we got an alert on the tv) when I looked outside it looked ok. I could smell smoke but didnt see any.
Until I walked out front. It looked like fog except it was coming from the wrong direction.

The weather here is really weird, tornado's, tropical storms, we get it all!!! Makes planning anything a mess. Like for the 4th I'm just staying home don't want to be bothered with traffic or the heat.

Our garage freezer somehow got left open so we lost probably 150 pounds of meat. Costly....good gods how costly. Ugh anyway I've been restocking from the local carniceria because lets face it....pre-marinaded, amazingly delicious meat is easier. And vacuum sealing everything. So we've been eating a lot of Mexican food lately. Marinated pork steak with Spanish rice and hominy. Tacos.
We are having spaghetti tonight though. Probably no garlic bread. It's just too damn hot to turn the oven on. Maybe I'll make it on the grill.

We did brats last night. Easy dinner. I also did a box of redbeans/rice and some broccoli. Glad it was simple.
tonight Im gonna do salmon with a basil butter (it comes already made, the butter that is)
I'll probably just put it in a disposable pan and cook on the grill.
Not sure of veg tho. Maybe a salad.
Im lol @ hubby. I got him watching CHOPPED with me on tv. He will say....oh no! That guys is going home. (he's usually wrong)
