Hey Side I hope you feel better!!

I think my slump is just plain old depression. I get where I just don't care what I eat. I

would eat better if I had people to cook for but for myself I just don't care.

I have it's been a long time but my niece is in Greece right now on a Culinary School thing now. I love it, it's very simple to make.

I make it, but am hoping for some tips; I add diced spinach to mine. That is how it was where I grew up so that is what I add although most people here have never had it with spinach.

My sisters mother in law used to make it and she just used chicken broth, diced chicken, egg, rice, and of course lemon juice. I never had it with spinach, that sounds like wonderful addition to it though. I would try thickening the broth a bit with corn starch, other wise I love it just the way it is. Simple and good!!!

Yeah, many people whip the corn starch into the eggs; I just watch some Youtube videos on making it this past week-end and I am going to try that the next time I make it.

Hmmm, never used corn starch, just egg yolks and lemon. And rice and diced chicken, with a really good broth base. If you like, you can whip the whites and add a little seasoning to them, then poach spoonfuls of them with the broth.

I made chicken veggie soup yesterday for the same reason, but it turned out bland. I am trying to think of something to kick it up. Might make dumplings, but the broth will still be bland.

I had the same problem with last week's chili.

I have started adding canned tomatoes with diced green chili's to a lot of stuff to add some extra kick!!! I did that with chicken cacciatore and OMG it was great!!! Love that added heat and flavor.

My Mother always added wine to soups, I may try that to make a richer flavor!

I use red wines in beef based stews and soups, but I never thought about it for chicken.

However, today that would mean going to a grocery store and at 46º it is too cold to leave the house.

You can add lemon or lime or cilantro for extra flavor for that chicken stock.
