You start with ground up meat, usually hamburger. It can be grnd pork, sausage, etc. You can wash your hands and throw it in a big bowl. You may throw in an egg or two, worcheshire sauce, or BBQ sauce, or other "extenders" like regular oatmeal. Mix it with your hands! Crissymn 10-30-2004, 06:07 PM A good way to make meatloaf is to buy about a pound of pre mixed meat veal and pork at the grocery store usally it is where the ground meats are and they label it meatloaf mix. Then take about 1/3 cup hot water and 1 egg and mix together. Add one cup seasoned bread crumbs and salt and pepper. Mix all together easist to mix with your hands :) Then put in a bread loaf shaped pan and top with ketuchp or bbq sauce if you want put 3-4 strips of bacon on top. then cook at 350 degrees for about 1 to 1 1/2 hours! Being from Texas, I like to put a little green bell pepper, diced onion and worcestershire sauce (what's this here sauce :) ) in it. The breading could be either oatmeal, or Cherrios, or bread crumbs -- the heel of bread is good for this -- salt, pepper, and after it is baked then I drain the grease that has accumulated -- so that it is not so fatty -- of course the amount of grease depends on the grade of meat -- whether it is ground beef, ground chuck, ground sirloin -- I usually use ground chuck. And yes!! mashed potatoes are a perfect complement -- with a green veggie or salad as a side dish. I have combined several recipes to make the worlds best meatloaf, IMHO. But this isn't one of them, as I was short some ingredients. Had to go with what was available and affordable.... To the meat mixture in the bowl: Add the cooled off sauteed veggies Add one egg Add a squirt or two of ketchup Add bread crumbs Season to taste, pepper, salt, cumin, whatever... open up your cupboard and experiment. Get your hands in there are really mix it well!! Realize that you added too much liquidy things, and ran out of bread crumbs, so steal some meat reserved for the burger. Now it is too dry, so open up the fridge and grab whatever hits your fancy... I added a touch of yellow mustard. To test if the meatloaf is the right consitency.... there isn't one. Whatever you like! Some like it dry for sandwiches, some like to moist enough to fall apart at the touch of a fork. Shape the meatloaf into square or rectangle or whatever baking pan you have. Stick in a 350 degree oven for about 30 to 45 minutes (depending on how tall the loaf is). elephantstamper 10-30-2004, 10:21 PM I put some shredded cheese in mine. The thing is, when you are baking and using baking powder or baking soda, you have to be EXACT in those measurements but here you can experiement and have fun! Sometimes I use ketchup or tomatoe sause and other times I have used BBQ sauce. Most of the times I use crackers opposed to oatmeal or bread crumbs. One time I didnt have crackers on hand so I used mashed up BBQ chips. I think that was probably one of the best meatloafs I've ever made. I know people who use canned sloppy joe mix in their meatloaf because of the flavor. Meatloaf is one of those things that you cant really do wrong. As long as you have wet and dry ingreadients(sp) you can expeirment. Keep in mind that eggs are always a must. Barbecue Sauce 3 cups ketchup 2 tablespoons Worcestershire sauce 1/2 teaspoon garlic powder 1 1/2 tablespoons molasses 3/4 cup brown sugar 2 teaspoons salt 1 pinch cayenne powder 2 teaspoons cider vinegar 3/4 cup water 1/4 cup honey 2 tablespoons fresh orange juice 1/2 teaspoon black pepper Combine all ingredients and simmer for 30 minutes. Allow to cool and refrigerate until needed. Meatloaf 2 pounds ground beef 8 ounces ground veal 1 1/4 pounds ground pork 1 diced medium white onion 4 cups sliced shiitake mushroom 2 tablespoons olive oil 2 eggs 1 1/2 cups bread crumbs 1 tablespoon chopped parsley 1 teaspoon chopped thyme 1 teaspoon chopped sage 1 1/2 tablespoons garlic puree 1 1/2 tablespoons heavy cream 1/2 tablespoon Worcestershire sauce 1 1/2 tablespoons salt and pepper 1/4 cup barbecue sauce Preheat oven to 325 degrees. Saute mushrooms in olive oil and set aside. Saute onions until caramelized and set aside. In large mixer, add beef, veal, pork, eggs, bread crumbs, herbs, garlic, and cream. Mix well. Add mushrooms and onions, Worcestershire, salt, and pepper. Put mixture into 6x9x4-inch loaf pan, pushing down firmly to pack meat into place. Cover with foil. Place loaf pan into a cooking pan at least 6-inches deep with 3 inches of water in the bottom. Cook in oven for 90 minutes. Remove foil and cover top of meatloaf with barbecue sauce. Cook for another 30 minutes. Manzanita 11-13-2004, 12:45 PM so do you bake it at 350 for 45 mts or 1.5 hours? I am trying this today! JJT 11-13-2004, 01:09 PM Cook in oven for 90 minutes. Remove foil and cover top of meatloaf with barbecue sauce. Cook for another 30 minutes.Looks like cook for 90 minutes, then do some stuff to it, and then cook another 30 minutes. All cooking times should be adjusted to the tempermant of your oven. The one here cooks hotter and faster than my last oven. Since this is your first time cooking the meatloaf, what I would suggest, is that after the first 60 minutes, check the loaf. If it is already totally brown, and pulling away from the edges, and SMELLS done, the add the topping and cook another 15 minutes, then check again to see if it needs additional cooking. The main thing.... dont' be opening and closing the door every ten minutes!! That cools the oven down and then the oven has to work to reheat, which causes uneven cooking. If your oven cooks right on tempature, and you trust it, then do as the recipe calls for. Let us know how it goes!! JJT Manzanita 11-13-2004, 08:49 PM not good...my sister n law told me I put too much bread crumbs...LOL I put a 1.5 cups bc, 2 eggs, bit of milk, 1/2 cup water, salt, onions, ketchup, soy sauce...it tasted good but oh man...by the time I tasted it twenty times that was it for me. It was soft and pasty :( and I make great mashed potatoes but tonight those were a bust too! Here's her recipe: 1 lb ground beef 1/2 lb ground pork 1/2 lb ground veal or ground turkey 1/2 cup diced celery 1/2 cup chopped onion 1 1/2 tsp salt 1 tsp dry mustard 2 beaten eggs 1-2 Tbls catsup 1 Tbls Worchestershire Sauce 1/2 cup bread cubes 1/2 cup warm milk Mix meat together. Mix remainiing ingredients briefly in blender. Add to meat and mix well. Form into 1 large or 2 small loafs. Place oon greased shallow baking pan. Pour 1/2 cup boiling water into pan. Here's how I do mine- Love Family Meat Loaf 1 lb ground beef 1 lg onion chopped finely 1 ( 4 oz) can of mild, chopped green chili 1 Egg raw ,dry Oatmeal to bind (I've never measured this, I can tell by feel when it's right.) 1 capful of worcestershire Catsup Mustard bbq sauce Seasonings. ( I use Mc Cormick Grill Mates, Fiesta Fajita Seasoning, Goya Adobo, and Emeril's Essence.- Any combination of those are JUST fine...) Pre heat oven to 350. In a bowl break up the raw ground beef with your hands, add in all the ingredients except for the oatmeal. Slowly add in the oatmeal until it's coming together and sticking, yet still moist. For traditional Meat Loaf- Pat out into a 9 by 5 inch loaf pan, top with either a little more bbq sauce or strips of raw bacon ( 2 to 4 should do it.) Bake for 1 hr. For Mini Personal Meat Loaves, cover a cookie sheet in foil, treat with cooking spray. Form oval miniature loaves..top with a little bbq sauce or wrap each one in a strip of bacon. It IS good...(It's all simple basic things almost everyone has on hand..nothing specialty or gourmet about it...) I prefer to make small meat loaves rather than 1 large one helps them cook faster- I've found a wonderful canned product, too, HUNT'S canned sauce marked "Meatloaf". (It's sometimes hard to find because it's with all the tomato sauces and NOT near the canned tomatoes usually.) I put in chopped bell peppers, LOTS of onions for the adults and NO onions for my grandkids (this is easy when you make the smaller loaves), 1 can diced tomatoes, 1-2 handfuls of frozen fresh corn (yep - corn!), 1 egg, 1/2 cup or so raw oatmeal, 3-4 saltine crackers crumbled up and 1 raw egg. For seasoning, I add 2 T fresh minced garlic (from a jar- too much work to mince myself), 1 T garlic salt, 1 T salt and 1/2 T salad-grind black pepper. After baking 20 minutes or so, I top each loaf with topping made from: 1 small, small can tomato sauce, 2-3 T brown sugar 1 T worchester sauce and 2-3 T ketsup My favorite side dish with meatloaf is either baked potatoes OR small red potatoes. Since your oven will be HOT anyways, I don't bake potatoes in the microwave when I'm making meatloaf, but in the oven: 1) wash and dry potatoes 2) coat each with thin coat of butter or shortening 3) salt each with mixture of garlic salt and pepper 4) poke each with lots of holes - to help them cook faster 5) wrap each in foil and bake til fork goes thru easily. For small red potatoes to bake while the meat loaves are baking: 1) wash and dry the baked potatoes 2) drop in a Reynolds oven bag and add: 1/3 cup oil 1/2 T salt, 1/2 T pepper 1/2 T garlic salt PLUS (if available) some FRESH rosemary and thyme (these are usually in the produce section beside the vegetarian products) Tipper 10-02-2005, 10:43 AM Hi all, Another twist to Meatloaf ~ prepare the meatloaf the way you normally would, place in pan. Peel and boil potatoes, mash, spread on top of meat loaf, add slices of american cheese cut on the diagional and bake. I make one very large meatloaf because everyone loves it. I use 4 pds ground beef, 2 cans meatloaf fixins, 1 sleeve saltines-crushed, 2 eggs, one large onion chopped finely, 3 tablespoons wortershire sauce, 1 table spoon each of garlic powder onion powder and seasoning salt. Mix well with your hands. I put it in a large cake pan. Cover in a thick coating of catsup. Bake on 375-400 degree oven for about 2 hours or untill catsup starts to brown. Pour off excess grease and serve with mashed potatoes and a veggy. I always say that I am going to freeze some for another quick meal but there is never any left. I use a baking pan that I have that has a tray that allows the food to be raised higher than the bottom of the pan. It's slotted so all of the fat and oil just drains and collect down below. It is great for meatloaf and for roasting chickens. I usualy line the loaf pan with slices of bread to soak up any oil or fat that may bake out of the meat loaf, this also keeps it from burning if you have it in too long. I also add sunflower seeds and olives to my meatloaf...both really are tasty additions. LOL I made a meat loaf the other day that was so simple and quick, and it turned out to be one of the best I ever made!! And I love making and eating meat loaf!! I took however much hamburger I had, put it in a bowl. Let it warm up for about 30 minutes. Cracked an egg into it. Crumbled up some ritz crackers with my hands and dropped those in. Plopped some ketchup and worchestershire sauce on it, salt and pepper and mixed it all up. It was delish!!! Of course, it was also very fatty meat, and that had a lot to do with it. Lean hamburger just doesn't work that well.
