Can someone please give me an easy recipe to make beef fajitas? I am a vegetarian but my fiance wants fajitas when he comes home and I need to practice. thanks so much. :)

I am a vegetarian but my fiance wants fajitas when he comes home and I need to practice. thanks so much. :) samiam158 08-09-2004, 06:52 PM i'm not so sure how beef will turn out but i use the fajita mix in our store and you just marinate it with the onions and green peppers...i have also used taco seasoning and my kids and hubby like that as well.. no matter what make sure you cut the beef in thin strips.....i use a sirlon tip steak..that is very tender... also you can just throw a bunch of seasons..cumin...chili powder...garlic powder...coriander...salt pepper...in to a bag with a little oil and water and marinate...oopps forgot lemon juice...yeah...that's the ticket :) just practice..and if you are full vegetarian..try those seasonings and/or the mixes with rice and refried beans... oh yeah and use the burritos shell of course.. oooh i love mexican food..hope it all turns out ok.... I love it and it's really easy. You can just switch the chicken with beef. 1 medium green bell pepper 1 medium red bell pepper 4 boneless, skinless chicken breast halves 2 teaspoons vegetable oil, divided 1 garlic clove, pressed 1 envelope Lipton Recipe Secrets Onion soup mix 1/2 cup water 1/2 cup salsa 12 flour tortillas 1) Cut bell peppers in 1/2 inch strips. Cut chicken crosswise into thin strips. 2) Heat skillet over medium-high heat. Add 1 teaspoon of the oil and chicken. Stir-fry 3-4 minutes or until chicken is no longer pink. Remove from skillet; set aside. Add remaining oil, bell peppers and garlic, pressed; stir-fry 1-2 minutes or until vegetables are crisp-tender. 3) Add chicken, soup mix, water and salsa to bell pepper mixture. Cook and stir 2-3 minutes or until heated through 4) to serve, place chicken mixture in center of tortillas. Serve with toppings, if desired. |
