I was tired of seeing our new forum empty:)
So...... I thought since the hoildays are nearing,tho it makes for an even harder time missing our loved ones, we still have family here to tend to or be with during the holidays and we eat so........I thought maybe we could share some recipes,I don't even have one picked out to share yet:) But thought I would mention it and see what you all think.I will think about it and post it later:) I am already gettin' hungry just thinking:) Kitty:)

good idea Kitty ive got a low cal recipe already to go its great for diabetics but i cant post it cuz my mom has it in her head and i cant write it down but i will!

I am thinking of several but still not sure which one...but it can be anything girls...holiday stuff, soups, cookies, deserts.......and we could all use ideas for healthy stuff.Kitty

okies we call this one Grannies Cherry Dessert:
1 tub of sugar free Cool Whip
2 lg boxes of Vanilla Pudding mix
4 c Skim Milk
2 cans of sugar free Cherry pie filling ( or apple)
2 9 in Ghramam Cracker crusts
__________________________________________
Mix vanilla pudding and milk together
Fold in whipped topping & divide into pie shells
cover with 1 can of pie filling each
cover, chill, and serve.

YUMMY!!!!!!!!!!!!!!!!! trust me you wont even know its sugar free !!!!

Pumpkin Streusel Cake Recipe
Streusel:
1/2 C. packed brown sugar
1 t. cinnamon
1/4 t. pumpkin pie spice
2 t. butter or margarine, softened

Cake:
3 C. all-purpose flour
2 t. baking soda
1 T. cinnamon
1 t. salt
1 C. butter or margarine, softened
2 C. granulated sugar
4 eggs
1 C. canned pumpkin (not pumpkin pie filling)
1 1/2 C. sour cream
1 t. vanilla
confectioners' sugar, optional

Preheat oven to 350°F. Grease and flour a 12-cup bundt cake pan.

For streusel, mix flour, soda, cinnamon and salt in medium bowl and set aside.

Beat butter and white sugar in large bowl with mixer on medium speed, until creamy. Scrape bowl occasionally. Add eggs, two at a time, beating well after each addition. Beat in pumpkin, sour cream and vanilla. Gradually beat in flour on low speed until blended.

Spread half the batter into bundt pan. Sprinkle the streusel mixture over top of batter, making sure streusel does not touch sides of pan. Top with remaining batter, making sure batter touches the sides of the pan.

Bake 55 to 60 minutes or until toothpick comes out clean. Cool in pan on wire rack for 30 minutes. Remove from pan to wire rack; cool completely. Dust with confectioners' sugar just before serving, if desired.

SWEET POTATO CASSEROLE

Servings:
4 to 6 servings
Prep. Time:
1:00
Total Time:
1:45

Ingredients:
3 cups cooked, mashed sweet potatoes (approx. 6-8 med sweet potatoes, either bake or boil until tender, then peel & mash, . . .boiling is easiest)
1 cup sugar
1/2 cup butter
1/3 cup milk
2 eggs, beaten
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 tsp. vanilla

Topping:
1 cup light brown sugar
1/3 cup butter, softened
1/2 cup flour
1 cup chopped pecans

Directions:
Mix top 6 ingredients and put in a 2 qt. baking dish. Mix topping ingredients together and sprinkle on top. Bake at 350°F for 25 minutes. Most times I have to make two batches. :thumbsup:

Ok, This one is my boys' favorite for a long time...and I am doing it from memory so...here goes:) My sons now cook this theirselves:)
Mexican Chicken
Boneless chicken breast- I prefer,but you can use whole chicken,cooked and diced.
1 can of Rotel tomatoes-the diced kind
1 large can of cream of mushroom soup
1 large can of cream of chicken soup
Large bag of Nachco cheese doritos -crushed
Add all ingredients together, I usually put it in the microwave and heat throughly to not have to bake it as long:)
Put into a 13x9 pan
Top off with a bag of shredded velveeta or cheese of your choice. Bake at 350 for 10-15 miutes or until cheese is melted good.If you don't microwave it first you will need to leave in oven longer, maybe 30 minutes then add cheese till melted.
We like it with whole kernel corn and Velveeta Macaroni & Cheese for side dishes:)

I am all for easy so here is another easy one and it is just the right time of the year to eat....Soup. Off my head again hope I remember it all:)

Tortilla Soup
Large can of Chicken and Rice soup
Can of Mexican Corn
Yellow Onion-chopped
Can of Rotel
Large can of Chicken Broth (plus a couple cans of water)
A couple Chicken boulian cubes
Mix all together in large pot and cook for 30 minutes.
The original recipe does not have this but I like extra chicken in mine so I add Boneless Chicken breasts -cut in bite-size pieces, and use that water instead of the can of Chicken Broth.(Cook this first then add other ingredients)
When it is about 8 minutes before you are ready to serve it add 8-10 corn tortilla shells that you cut into strips and when you are ready to serve put in bowl and add a handful of shredded cheese...yes, my favorite is Velveeta:)
I like to eat with Tortilla chips, instead of Crackers.The Tortilla Strips from Wal-Mart are really good ones.

We had a halloween party at work today and someone made the best dessert. I'm gonna get the recipe and post it on here. It was really good and they said it was simple so that's just my style :)

The Pumpkin cake sounds yummy, I might try it for Thanksgiving,but I would have to eat the whole thing by myself if I made it now:) Which I probably could but my pants would not fit right the next day:)Grannie's desert sounds good and very easy, I will try it to.

1 heaping tsp. paprika
1 heaping tsp. salt
1/4 tsp. dry mustard
1 tsp. chili powder
1/2 tsp. cumin powder
1Tb. catsup
1tsp. jalapeno juice
1 pod jalapeno pepper, chopped
2 cups milk
1 clove garlic
8 ounces Velveeta cheese

Mix oleo and flour to paste in a double boiler. Add remaining ingredients and bring to a boil. You may use more jalapeno peppers for a hotter dip. Serve with chips.
Serves 8 -10

2 large cans (Hunts) whole tomatoes
2 chopped fresh jalapeno peppers (or more to taste)
Garlic powder (about 2 Tablespoons) or to taste
salt (about 1 to 2 teaspoons) or to taste

with gloves.... mash tomatoes by hand
add chopped peppers, garlic and salt
mix well
refrigerate at least overnight, or for 48 hours.

My mother makes these things and puts them in a basket with chips for her neighbors at Christmas. They always ask for more. I hope you enjoy them as much as I do.

ive got a recipe similar to this and its excellent cant wait to go shopping and get the stuff for it.... :D thanks for reminding me....LOL
