Kahlua (recipe from Michigan Abate Cookbook)

9 cups water
5 pounds of sugar
30 tbsp instant coffee
1/2 gallon Vodka 80 or 100 %
8 oz. pure vanilla
Mix water, sugar, and coffee in 2 gallon pot over medium high temperature. Heat to a boil. Reduce Heat. Simmer 2 hours. Cool to room temperature, add remaining ingredients. Pour in dark bottles. You can drink it right away, but the longer you wait the better it gets. Wait 6 months for best Kahlua. Makes almost 2 gallons.
You can whip some up now and give to friends at the Holidays however I guarantee it won't last that long....so start having friends start saving their empty bottles for you so you can make some....Happy cooking :) Judy

Nawna, Everyone that I know that makes it uses empty liquor bottles. I have friends save bottles for me or if you know a bartender you could have them save you a few, just remember you need dark glass not clear. Enjoy! Judy

Makes 6 drinks
1 can (12 oz) frozen apple juice concentrate
1 1/4 cups Tequila (or so the recipe says) :)
2 tbsp Calvados or Apple brandy
Grated rind and juice of 1 lime
3 cups Ice
In a blender, combine frozen apple juice concentrate, tequila, apple brandy, lime rind and juice and ice. Blend until smooth. Pour into glasses and serve...Garnish with thin apple slices and lime slices.....YUMMMM

Please the holidays are around the corner and i want to make some coquito. Its a spanish drink made from coconut and other ingrediants. Can someone tell me what i need and how to make it.

Freddie's Coquito (Creamy Tropical Liqueur)



Ingredients:

2 cans cream of cocoanut (Coco-Lopez)
2 cans condensed milk
4 - 6 oz Bacardi white rum
1/4 tsp cinnamon
1/4 tsp ground cloves
1/8 tsp nutmeg
1 tsp vanilla extract


Directions:

Mix all ingredients in a blender or food processor. Store refrigerated. Remove from refrigerator a half hour prior to serving and warm slightly (Freddie thinks the optimum temperature is obtained by warming on the back of a computer monitor). Freddie Merced

Ingredients
4 cups coconut milk
6 tbsp. white sugar
8 egg yolks
2 teaspoons of La Flor Vanilla Extract
8 tbsp. dark rum
1/2 teaspoon of La Flor Ground Nutmeg


Description
Combine the coconut milk and the sugar in a saucepan and scald over medium heat.
Beat the egg yolks with the vanilla. Beat in 1/2 cup of the scalded mixture into
the scalded mixture. Stirring mixture constantly, cook over low heat until mixture
reaches a temperature of 160 degrees. The mixture should be thick enough
to coat the back of a spoon.
Strain the eggnog into a bowl. Stir in the rum and let cool to room temperature.
Place plastic wrap on the surface and refrigerate until well chilled. Once chilled
serve with nutmeg sprinkled on top.

Recetas de Coquito (licor) y merenguitos



Aquí va la receta prometida del Coquito. Es como un ponche, algo parecido al eggnog, pero hecho con coco y ron. El original es con el coco rallado y con ron hecho en casa, sin preservativos, pero esto ultimo es, pues, ilegal.

Esta receta que mandaron a la lista Coquí se llama Coquito para vagos, pues todos los ingredientes son comprados ya hechos. Luego les doy mis variaciones. Recomiendo usar ron puertorriqueño, el de otras islas tiende a ser muy amelazado y no le da el sabor picantito a ron que debe tener. Preferiblemente ron Don Q, Palo Viejo o El Barrilito. Si no los encuentran, pues Bacardi, que se consigue en todo el mundo por lo que veo.

Coquito para vagos de Edda López

Se necesitan:

2 latas de leche evaporada

2 latas de leche condensada

2 latas de leche de coco (Ojo: No es Coco López; es la leche de Coco que venden en los supermercados chinos y que no tiene azúcar. Para mi gusto quedaría muy dulce con el Coco López... aunque pensándolo bien, así ayudan las finanzas de la familia López que es como si fuera la mía)

Ron a gusto (Mairym le echó el equivalente a dos latas de leche condensada y quedo chulisnaquis). Aquí les va una orejita de Claudio, el catador oficial de rones: Si usas ron Barrilito tres estrellas no le tienes que echar nada más. Si usas Don Q o Palo Viejo, echale una canequita de Brandy. Queda RICO... Por favor, guarda el Bacardi para las otras fiestas :-)

Seis yemas de huevo.
Ponlo todo en la licuadora. Es más, pon un poquito, mezcla, prueba, pon otro poquito, mezcla, prueba. Si estás cocinando, apaga la olla y siéntate a disfrutarlo.


Como dije en mensaje anterior: hagan un "label" a mano con la recetita, compren botellas lindas, adórnenlas con rafia y regalenlas en Navidad. Les juro seran la alegría de las casas.

Nota: No le echo la canela en polvo sino hasta que estoy lista para servirlo. Se evita que se "emplegoste".

Yo uso los mismos ingredientes en otra proporción:



1 lata (12 oz. o 354ml. segun la lata) de leche evaporada
1 lata (14 oz. o 396g. segun la lata) de leche condensada
3 yemas de huevo (las claras las hago luego en merengues y quedan...)
1/2 lata de crema de coco si es la lata alta. (El año pasado consegui unas latitas pequeñas de 8.5 oz. o 240g.y quedan bien con estas, yo uso Coco López, pero voy a tratar este año con el que ella dice pues me queda bastante dulce).
250ml. de ron Don Q o Palo Viejo (o a gusto)
1/8 taza de brandy (o a gusto)
1 cdta. canela molida (la idea de Edda no es mala, de dejarla para cuando se sirve)


Estas proporciones caben perfectamente bien en la taza de mi licuadora. Es mi adaptación de la receta de la chef Giovanna Huyke que publica todos los años en el periódico.

Lo de mezclar y probar es lo ideal, termina uno con una nota muy navideña y decora la casa en un santiamén. Hay que hacerlo escuchando música navideña, preferiblemente puertorriqueña.

<A name=merenguito>Receta de merenguitos

Un año me puse a buscar que podia hacer con las claras de huevo que sobraban y consegui una receta de merenguitos que se han hecho famosos entre mis compañeros de trabajo. Para Navidad, divido la mezcla y le echo a una color vegetal rojo y a la otra verde, asi quedan merenguitos navideños. Deben quedar amelcochados por dentro.


La receta es del libro: COCINA CRIOLLA de Doña Carmen Aboy de Valldejuli (un clásico de la cocina puertorriqueña), de la version vieja del libro de mi mamá de 1955, en otras ediciones no sale.

Ingredientes:


1 y ½ taza de azúcar cernida
7 claras de huevo (yo uso 6 porque es lo que me sobra del coquito)
1/8 cdta. de sal
½ cdta. de ralladura de limon verde
¾ taza de azucar cernida


Caliente el horno a 275°F (135°C) (esto es importante, que no sea a fuego muy alto para que queden amelcochados por dentro). No es una temperatura muy alta, un bizcocho (pastel de cumpleaños), por ejemplo, se haría a 350°C)

Bata las claras junto con la sal hasta que queden bien esponjosas y formen un pico. Si usa batidora electrica, bata a velocidad ALTA. (a punto de merengue)

Agréguele cucharada por cucharada, la taza y media de azucar. Bata por 3 minutos despues de haber agregado el azúcar.

Añada, envolviéndola en el batido, los ¾ taza de azúcar. Añada la ralladura de limón. Si usa batidora electrica batalo a velocidad BAJA cuando añada este azucar.

Engrase dos laminas de aluminio y vaya colocando la mezcla por cucharaditas en ellas.

Métalo al horno por 45 minutos.

I'm having my Christmas party and I have a ton of wine and as I stand in front of my fridge, I'm stumped as to which are chilled and which are not. "Whites and pinks are chilled, reds are room temperature" is what everyone is telling me but I have a few bottles that I can't simply tell because of the color of the botle!

Merlot - I believe that's red, right?
White Merlot - I would assume that's why but if it's a merlot is it red and the name is just playing mind games with me?
Shiraz Cabnernet Sauvignon - HUH? What the heck is this one? I just bought it because it was on sale and I liked the pretty blue bottle. Yes, this pretty blue bottle that I can't see through and is causing me a headache :)
Sauvignon Blanc - It looks white...but I just want to be sure.
White Zinfandel - Why do they call it white zinfandel if it appears to be pink?

HELP ME!!! :) 10 hours 'til the party... I have too much work to do!

Merlot is a light wine, so you can drink it chilled. The white Merlot is actually a lighter one but is red.

The Shiraz Cabernet Sauvignon is a red wine you must drink at room temperature. The fact it's in a blue bottle is a real shame IMO.

Sauvignon Blanc is probably white since "blanc" is french for white :D

I don't know White Zinfandel, but I found this on the net: "White Zinfandel is a pale-rose wine that's very sweet."

No the white Merlot will be better if chilled. It's a red one but lighter than a real red wine.

Fill a tall glass with crushed ice. Mix together 4 oz. grape juice, 1 1/2 oz. vodka and 1/2 oz. freshly squeezed lemon juice. Pour over crushed ice and serve.

Pineapple Bomb

Ingredients:
1 part Amaretto
1 part Southern Comfort
1 part Pineapple juice
Mixing instructions:
Fill a glass with ice, then add amaretto and Southern Comfort. Fill rest of glass (at least 1/3 of volume) with pineapple juice

OR

Ingredients:
1 part Southern Comfort
1 part Triple sec
1 part Pineapple juice
Mixing instructions:
Combine all ingredients in a shaker with ice. Optional splash of 7up or Sprite can be added... Shake Until condensation forms on outside of shaker Strain into shot glasses

my two favorites

1. fill a shaker with ice
add 3 oz vanilla vodka
1/2 oz pomegranite juice
fill the rest with white cranberry-peach juice
shake and pour

2. Alcatrez

1 1/2 oz aleze (passion fruit liquier)
1 oz malibu
pinapple juice
splash of cranberry juice
can add a tiny bit of soda water as well, or use orange juice instaed of pinapple

This Valentine's Day, play Cupid with some tantalizing treats for your beloved.

Oh sure, you can offer the object your affections the usual box of chocolates, tiny truffles or other common confections. But anybody can do that. Instead, why don't you woo your sweetie with taste temptations that they can sip as you snuggle? After all, it's infinitely easier to hold hands and whisper sweet nothings when you're not wielding sharp dining instruments.

Here are a few ideas to bring out your inner Cupid -- based on some of the favorite flavors and colors of the holiday:

Honey

Ah, honey. The golden nectar has a way of lending a kiss of sweetness to everything it touches.

Mead is honey's contribution to the fermentable world. Like grapes are to wine and grain is to beer, honey gives mead its unique flavor and texture. Mead is the original beverage of passion: An old custom was for newlyweds to drink mead for one full moon cycle after their wedding -- hence, the "honeymoon." Meads come in many different flavors and colors, depending on what is combined with the mead. There are a growing number of mead makers popping up all over the country. Contact a local wine or beer shop for information on how to get this light-but-potent beverage in your area. I am sure Cupid would approve.

Honey is a main ingredient in this recipe -- sure to warm up the object of your affections. You can make it without the optional rum, or add it if you want a bit more punch. It makes quite a bit, so you can let it simmer on the stove while you two lovebirds simmer in each other's arms. Instant aromatherapy!

Honey Grog

4 c. cider or apple juice
juice of one orange
¼ c. honey
2 tbsp. butter or margarine
1 cinnamon stick, 3 inches long
1 tsp. grated orange peel
¼ tsp. ground nutmeg
½ to ¾ c. light rum (optional)
Combine all ingredients except rum in a medium saucepan and bring to a simmer, stirring occasionally. Simmer 5 minutes.Stir in rum just before serving, if desired. (Makes 8 servings)

Chocolate

Chocolate, of course, is the quintessential Valentine's treat. It was viewed as an aphrodisiac by the Aztecs, who thought it invigorated men and made women less inhibited. When it was first introduced to Europe, chocolate quickly became the ideal gift for a someone to receive from an admirer or a loved one. Researchers are finding that certain components in chocolate act as mood-lifters, which could have something to do with why it is so popular -- and not just during Valentine's Day.

Chocolate and port wine are very compatible -- a perfect romantic combination. There is at least one American port maker who has mixed the two together -- and the results are like confection in a glass. Rosenblum Cellars offers Danielle Chocolate Port -- a dessert wine with hints of black cherry, spices, orange, vanilla and milk chocolate. Skip the chocolate dessert and save the calories! Danielle is available at many wine shops.

If your Pookie is more partial to beer, Boston-based Samuel Adams is brewing up a limited-edition chocolate-flavored beer for Valentine's Day.

Chocolate Bock, a dark beer with a complex full-body taste and velvety finish, will hit shelves just in time for Cupid to come calling.

But Sam Adams is not the first American brewery to try its hand at a chocolate beer. Rogue Brewing, out of Newport, Ore., offers a Chocolate Stout that is great all alone in a glass -- or over vanilla ice cream. Really. You won't even need a cherry on top.

Need to add a little fizz to your love life? A Seattle soda maker just announced that it is releasing a fudge-flavored soda pop just in time for Valentine's Day.

Perhaps tea tickles your honey's fancy. There are several chocolate teas on the market. Usually a black tea infused with chocolate, it's tasty both hot or over ice. There's even one version that is sprinkled with rosebuds. Now that's enough to make anybody feel romantic!

Apple

Ah, the forbidden fruit! Entice the apple of your eye with a nonalcoholic apple smoothie:

Frosty Apple Delight

2 c. cold skim milk
2 oz. apple juice concentrate
¾ c. vanilla ice cream
Cinnamon and nutmeg to taste
Blend all ingredients until frothy. Pour into chilled mugs or glasses. Add extra cinnamon and nutmeg to taste.

If you want to add a little kick to your sweetheart's glass, try this apple drink. It's red, too -- the color of the season:

Red Apple

1 oz. 100-proof vodka
1 oz. apple juice
1 tbsp. lemon juice
1 tsp. grenadine
Shake all ingredients with ice, strain into a cocktail glass, and serve.

With treats like these, your sweeite might just want to skip dessert!

A Holiday drink we have at our house a lot and everyone loves it!



1 small package cranberry or strawberry jello
2 cups cranberry juice
12 oz frozen lemonade
12 oz frozen orange juice
2 1/2 cups vodka

Add jello to 1 cup boiling water and stir until dissolved. Put jello solution, cranberry juice, lemonade, oj and vodka with an additional 3 cups of water into a 5 quart container. Mix well and freeze. Spoon into glass and serve with 7-up, squirt or ginger ale.

I have always used strawberry jello and ginger ale, but that's just my preference. An ice cream bucket works fabulously. It's best to allow 2 days for it to freeze.

Well for any of you who like to drink Pepsi or Coke, I haven't tried this in any other sodas, but it sure adds a twist in these. Yea, I know the sugar content is high, but wowee, what a twist.

I was eating Cinnamon Red Hots candy and oh my they were hot. I happened to drop some in my pepsi and I let it sit awhile before finish drinking it. It definitely tastes different, so if you like red hots, you may want to give it a try.

babygirl- I don't drink any kind of soda but I think you should contact the Pepsi marketing dept. and tell them(before someone else does). You never know, they might not have thought of that combo yet!

If you are bored with the same old drinks why not try something a little different like Mulled Wine...

"The history of Mulled wines date back to medieval times where these wines were named after the physician Hippocrates and called Ypocras or Hipocris. Thought to be very healthy, considering wine at the time being more sanitary than drinking water, these heated drinks probably did sustain their health through the cold winter months.. "


A Modern yet Traditional Mulled Wine Recipe:
2 lemons
2 oranges
1 - 750 ml bottle of medium, to full, bodied red wine
Nutmeg (to taste)
Cloves (to taste)
1 oz brandy or Cognac (or to taste)
1 cup (250 ml) granulated sugar (optional)
Herbal or citrus influenced tea (optional but excellent)
Water (optional softener instead of tea)
4 large cinnamon sticks
4 candy canes

Instructions for making four large portions
-Cut lemons and oranges into slices.
-Pour the red wine into saucepan and gradually heat.
-Add fruit slices, nutmeg, cloves and brandy.
-Keep an eye on the mixture and wait until it becomes hot to the touch.
-At this point you could blend in sugar or water (if desired).
-Pour into glasses/mugs and add tea (to taste).
-Garnish with cinnamon stick and candy cane.
Serve

I am sure a lot of us have heard of this winter drink but how many have made it or even tried it?

A variation:
Hot Scotch Toddy
2 measures Scotch whiskey
3 measures boiling water
1/2 measure lemon juice
1 teaspoon honey (or brown sugar)
3 drops angostura bitters
1 slice lemon, studded with cloves
ground nutmeg
Put the sugar, bitters, lemon juice, and clove-studded lemon slice in the glass. Add the Scotch and pour in the boiling water. Stir to dissolve the sugar and sprinkle with ground nutmeg. Now, that's medicine!

I add a spoonful vanilla sugar per liter.
It's delicious as well with Amaretto or Bacardi instead of brandy or Cognac.
