This is a simple, simple recipe. I like it because it's quick and very inexpensive and my kids love them.

1 cup peanut butter
1 cup sugar
1 tablespoon vanilla
1 egg

Mix, form and stick 'em on a cookie sheet- bake at 300 for 15 minutes- maybe a little less.

They're cheap and yummy!

I've made these cookies several times now. My stepsons cooked 3 dozen on their own. They were so proud that they took a doz. back home with them.

Trust me, they are umm umm delicious :thumbsup: I'm a diabetic, so I took the same recipe and supplemented the sugar with the exact same amount of Splenda, and to my surprise they were just as tasty :D

Hats off to the one who thought up this easy and cheap way to enjoy peanut butter. It's a great way to gather the family together for some quality time. :D

The White House's Executive Chef Shares His Holiday Cookie Recipe
Dec. 5, 2004 — Thaddeus DuBois, executive pastry chef for the White House gave "Good Morning America's" weekend edition one of his favorite holiday recipes.

White House Soft Rolled Christmas Sugar Cookies:
Makes about 2-3 dozen cookies (depending on size of cutters)
Cookie Dough Ingredients
1/2 cup of sugar
1/2 cup of butter, soft, unsalted
2 large eggs
1 tsp. of vanilla
2 1/2 cups of all purpose flour
1 tsp. of salt
2 tsp. of baking powder

Icing Ingredients
2 egg whites (from large eggs)
4-6 cups powdered sugar
1/2 tsp. vanilla
1/4 tsp. lemon juice
liquid food color, as desired

Method — Cookie Dough:

1. Combine sugar and butter and beat until light and fluffy, about 8-10 minutes with an electric mixer and paddle attachment.

2. Add eggs and vanilla and blend.

3. Sift flour, salt and baking powder and add. Mix until a dough forms.

4. Wrap dough in plastic and chill for at least two hours or overnight before using.

5. Roll on a lightly floured surface to 1/4" thick. Cut out desired Chirstmas shapes like, bells, santas, snowmen, stars, candy canes and etc.

6. Place cookies on a baking tray that has been lined with baking paper or grease baking tray if no paper is avaliable.

7. Baking: Bake at 350 degrees Fahrenheit for about 10-12 minutes until lightly browned. Baking times depend on the oven. Rotate baking tray halfway through the baking time. Do not over-bake or cookies will get too hard. These cookies should be soft.

8. Let cookies cool completely before decorating.

Method — Icing:

1. Place egg whites in the bowl of an electric mixer.

2. Sift powdered sugar. Gradually add sugar as mixer is running on low speed. May require a little more or less sugar depending on size of egg whites used.

3. Add lemon juice and vanilla and blend well.

4. Divide icing into small bowls and color as desired.

5. Decorate cookies as you wish.

Note: For a quick way to decorate cookies without using the icing, brush cookies with a slightly beaten egg white and sprinkle cookies with colored sugar(s) before baking.

I love maple syrup as I am sure most people do - I haven't tried these yet but they look so easy! :)
Title: Maple Nut Drops
Categories: Cookies
Yield: 36 servings

2/3 c Maple syrup
1 1/3 c Sweetened condensed milk
2 c Graham cracker crumbs
1 ts Vanilla extract
1 c Chopped nuts

Recipe by: Mary M McBride's Encyclopedia of Cooking
Preheat oven to 350 degrees; grease cookie sheets. Cook maple syrup
and condensed milk in a heavy pan for about 3 minutes, until thickened. Be
careful not to scorch. Cool slightly and add graham cracker crumbs, vanilla
extract and chopped nuts. Drop from teaspoon onto prepared pans and bake for 15 minutes. Remove from pan at once. Cookies will be hard if overbaked.
Store in jar to soften. Be sure to use sweetened condensed milk, as the
results will not be the same with evaporated milk.

Oh my goodness, and all along I have been using all these ingriedents, flour, sugar, vanilla, egg, butter, peanut butter, etc: etc: Thanx for this more simpler recipe. I used to hate making PB cookies because of all of the stuff I needed, and all the mixing. And my kids love PB cookies. I can't wait to use this recipe. Thanx :thumbsup: :) :p

Here's another easy recipe:

1 can sweetened condensed milk
1 egg
1 cup peanut butter
1 tsp vanilla
2 cups Bisquick
Granulated sugar

Beat sweetened condensed milk, egg, peanut butter & vanilla in large mixing bowl until smooth. Add biscuit mix. Mix well. Chill minimum 1 hr.
Pre-heat oven to 350 deg. Roll batter into 1-inch balls, then roll in sugar. Place 2 inches apart on ungreased cookie sheet. Flatten with fork. Bake 6 to 8 minutes--cookies should only be lightly browned. (I never bake them longer than 8 minutes, or the bottoms burn.) Allow to cool.
**I like to add chocolate chips and/or peanut butter chips**

I posted a version of this when this forum first opened, except I also add 1 tsp. of vanilla. Lots of PTO'ers made them and loved them!!

CHOCOLATE OATMEAL COOKIES
1 stick butter
3 tbsp. cocoa
2 c. sugar
1/2 c. milk
1/3 c. peanut butter
3 c. quick cooking oatmeal

Mix and boil hard for 1 minute. Remove from heat, then add peanut butter and quick cooking oatmeal.
Mix well and drop with a spoon onto wax paper or foil.
To make Peanut Butter Oatmeal Cookies: Leave out the chocolate and double the peanut butter.

danielle- they sound really good - I have never had chocolate oatmeal cookies so I will try these. Do you just let them 'set' on the foil at room temp. or do you put them in the fridge?

When I make them I put them on wax paper--so they dont stick. Just sit them on the counter and they will harden. YUMMY!!!

Title: World's Best Cookies



1 c Butter
1 c Sugar
1 c Brown sugar
1 c Crushed cornflakes
1/2 c Shredded coconut
1/2 c Chopped pecans
1 Egg
1 c Oil
1 c Rolled oats
3 1/2 c Flour
1 ts Soda
1 ts Salt
1 ts Vanilla

Cream butter and sugars until light and fluffy. Add egg and mix well.
Add oil and mix well. Add oats, cornflakes, coconut, pecans and vainlla.
Add flour, soda and salt. Form int 1" balls. Place on ungreased baking
sheet. Flatten with a glass dipped in sugar. Bake at 350 for 10 min. Cool
on cookie sheets for a few seconds before removing.

One of my girlfriends uses a very similar recipe but where you used crushed cornflakes, she uses crushed Lay's potato chips...she calls them Potato Chip Cookies:) ...of course. I just sent her an email to get the recipe. I'll post it when I get it. She makes them annually as part of her Christmas Cookie baking.

CHOCOLATE CHIP COOKIES

1/2 c reduced calorie margarine
3/4 c splenda
1 egg
1 tsp vanilla
1 c all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 c mini chocolate chips
1/4 c chopped walnuts or pecans

Preheat oven to 375 degrees. Spray cooking sheets with butter flavor cooking spray. In large bowl cream together margarine & splenda. Add egg and vanilla, then add flour baking soda and salt. fold inchips and nuts. Drop by tablespoon and flatten. Cook 8-10 minutes.

12 servings (2 each) 157 calories, 9 gm fat, 2 gm protein, 17 gm carbohydrate, 179 mg sodium, 8 mg calcium, 1 gm fiber diet exchange : 1 starch - 1 1/2 fat Healthy exchanges selections - 1 fat - 1/3 bread - 1/2 slider 7 optional calories

Chips Galore Cookies
Serving Size : 108

1 cup butter or margarine -- softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 tablespoon almond extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups semisweet chocolate chips
1 1/2 cups milk chocolate chips
1 1/2 cups vanilla or white chips
1 1/2 cups chopped pecans
1 1/2 cups chopped walnuts

In a mixing bowl, cream butter and sugars. Add eggs, one at a time,beatingwell after each addition. Beat in almond extract. Combine flour, baking soda and salt. Gradually add to creamed mixture.Combine chips and nuts. Stir into dough. Cover and refrigerate for 1 hour or until easy to handle.

Drop by tablespoonfuls 2" apart onto greased baking sheets.Bake at 325º for 18-20 minutes or until golden brown. Remove to wireracks to cool.

1/2 cup plus 2 tablespoons sugar
2 1/2 cups flour
1 1/4 cups butter
1 1/4 cups cream cheese
1/2 teaspoon vanilla -- optional
1/4 teaspoon apple pie spice
Filling
2/3 cup sugar
2 tablespoons lemon juice
1/2 teaspoon lemon zest
4 small green apples
3/8 teaspoon cinnamon
1/2 cup butter
1 teaspoon flour
3 teaspoons apple syrup

Grate or *finely* dice apples and mix them thoroughly with the
lemon juice, cinnamon, flour, and lemon zest. Set aside in refrigerator.

Stir butter and sugar together over low heat till the mixture melts
together and bubbles thoroughly; you want a light caramel.
Remove from heat and stir in apple syrup and
the refrigerated apple mixture.

Cool the filling a bit before using.

Apple syrup: Reduce 1 cup apple juice or cider (cider is preferable)
to 2 to 3 tbsp of liquid over
low heat. Watch it carefully, lest it burn. Apple brandy can be
substituted, but the amount of sugar
has to be increased to 1 cup less 2 tablespoons, maybe a bit more if
the apples are very tart.
Assembly:
Roll the dough thick (1/6 to 1/4 inch) and go scantily on the filling.
This filling may well make a double recipe of cookies relative to this crust.
You can assemble these either like pierogi, in circles of dough that are
folded over filling and sealed, or like ravioli, by laying one sheet of
dough over another and sealing them.

Once assembled, bake these at 350 degrees until golden brown and
pastry-set.

That took 10 minutes for 2-inch-long ones.

These cookies sound pretty good. I think that I am going to make them this weekend. We are having Sweet 16 BarBQ for my daughter and I wanted to make some treats for the kids instead of giving them chips.

I'll let you know how I do with the recipe.

My all time fave home made cookies,we call them "Cookie Quickies" but on this website they are called oatmeal fudge cookies

INGREDIENTS (3 dozen cookies)
3 cups rolled oats ( I use quaker oats)
1 tsp vanilla extract
2 cups granulated sugar
1/2 cup cocoa powder
1/2 cup evaporated milk
1/4 lb butter

(1) Combine oats and vanilla in a bowl and set
aside.

(2) Combine sugar, cocoa and evaporated milk in a
heavy, 2-quart sauce pan.

(3) Bring to a full rolling boil over medium high
heat, STIRRING CONSTANTLY. Let boil, while stir-
ring, for 2 minutes.

(4) Remove pan from heat and add the butter. Stir
until butter is melted and incorporated.

(5) Quickly add oat mixture to pan and stir until well
mixed.

(6) Drop by the spoonful onto waxed paper. Let cool
for 2 hours to set.

I was just surfing the net today and I plugged in Neiman Marcus Cookies into my search engine. I was curious to find out the history of the NM cookie because as many times as I have shopped in NM, I never knew they made cookies.:p

Here is my girlfriend's recipe for her "famous" Potato chip cookies. She bakes and sells tons of them around the holidays. My kids love them!


Potato Chip Cookies

2 sticks of butter
1 ½ cup sugar
2 egg
½ tsp vanilla
2 c flour
1 c crushed potato chips
1 c chopped pecans
1 tsp baking powder

Cream softened butter with sugar, beat in eggs. Add flour mixture. Blend well with wooded spoon. Add crushed potato chips, then chopped pecans.

With teaspoon drop cookies on non-stick cookie sheet. Bake for about 15 minutes til golden brown on the bottom edges. Let cool for a few minutes and remove from cookie sheet on to wax paper.

Enjoy!

*I use Pringle potato chips because they are not greasy. Sometimes I use a mixture of Ruffles with Ridges and Pringles for a moister cookie texture.

Potato Chip Cookies

1 C. Shortening
2 C. flour
1 C. Sugar
1 C. Brown Sugar
2 Eggs Well beaten
1 tsp baking soda
2 C. crushed Potato Chips
1 ( 12 oz) bag butterscotch chips

Cream the shortening and sugars together, add the eggs,flour and soda. mix well. stir in the crushed potato chips and butterscotch morsels. Drop onto ungreased cookie sheet by spoon. Bake at 325 for 10-12 minutes.
Yields 3 dozen.

Blonde Brownies

2 C. All purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2/3 C. Butter or margarine
2 C. firmly packed brown sugar
2 eggs slightly beaten
2 tsp vanilla
1 C. chocolate chips
1/3 C. chopped pecans

Mix flour,baking soda,baking powder and salt. Melt butter in sauce pan; add sugar,blend in eggs and vanilla. Add flour mixture gradually, mixing well. Spread into a 9 by 13 inch pan, sprinkle with chips and nuts. Bake at 350 for 30 minutes. Cool in pan, cut into bars.
Yields 48 bar cookies.

Danish Sugar Cookies

1 C. sugar
1 C.Powdered sugar
1 C. Vegetable Oil
1 C. Butter
2 eggs
4 C. flour
1 tsp. cream of tartar
1/2 tsp. salt
1 tsp baking soda.

Cream sugars,vanilla,oil,butter and eggs together. Sift flour,cream of tartar,salt,and baking soda together. Gradually mix the dry ingredients into the creamed mixture. Drop by teaspoon full onto a greased cookie sheet or foil. Bake at 325 for 8 to 10 minutes.

This makes a LARGE batch, and it freezes well.

These three cookie recipes are MUST bake durring the holiday season at my house..Let's just say that there are unhappy campers if these aren't present! LOL...

Ginger Spice Cookies (for the health conscious)

3/4 c butter, softened
1/2 c unsweetened applesauce
1/2 c pumpkin, pureed
1 c molasses
1/4 c egg whites (from about 4 large eggs)
1-1/2 c unbleached all-purpose flour
1 c whole-wheat pastry flour
1 tsp baking soda
1-1/4 tsp ginger
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg

Preheat oven to 350 degrees. Coat two baking sheets with cooking spray and set aside.

In a mixing bowl, beat the butter with an electric mixer until soft and creamy. Add the applesauce and pumpkin. Mix well. Add the molasses and egg whites. Beat until creamy.

In a separate mixing bowl, combine the flours, baking soda, ginger, cinnamon, cloves and nutmeg. Stir the dry ingredienrs into the wet mixture until well combined.

Drop the dough by heaping teaspoons onto the prepared baking sheets. Bake for 12-15 minutes or until lightly browned. Transfer to a wire rack to cool.

Makes 65 cookies

Pecan Pie Cookies:

COOKIE
1 C. firmly packed brown suger
3/4 C. softened butter
1 egg
1 t. vanilla
2 C. all-purpose flour
1t. baking powder

FILLING
1 C. chopped pecans
1/2 C. firmly packed brown sugar
1/4 C. whipping cream
1t. vanilla
Combine all.

Combine first 4 cookie ingredients and cream well. add flour and baking powder, beat 'til well mixed. Shape into 1 1/2 inch balls and stick your thumb in them to make a hole for the filling.

Use ~1 teaspoon of filling per cookie. Bake at 350 for 8-12 minutes. Let cool for a couple of minutes before removing from cookie sheet.

Healthier Peanut Butter Cookies

2 cups granulated sugar
1/2 cup evaporated milk
2 tablespoons cocoa
4 ounces butter (1 stick)
3 tablespoons peanut butter
1 teaspoon vanilla extract
2 1/2 cups quick-cooking oats

Combine sugar, milk, cocoa, and butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat; stir in vanilla, peanut butter

Add oatmeal and stir to blend thoroughly. Drop by teaspoonfuls onto waxed paper. Makes about 4 dozen no bake chocolate oatmeal cookies.

Mine is similar but doesn't call for peanut butter and also says to use real milk not evaporated. I am using Stater Bros Brand soft spread with 48% vegetable oil, whatever that means. So am I using the wrong butter?

It probably is the butter.... try using regular margarine like Parkay, etc.
