Hello everyone! :)

Just wanted to know if anyone knows how to re-fry chinese fried rice. I always save the leftovers from my take-out in the fridge, and want to know how to fry it up good again after it has been refridgerated!!:o

I have no luck with leftovers!!

Hi Jess,

I don't know about re-frying it, but I when I make fried rice myself I just spray a pan with some Pam or something and reheat it. I would think that adding oil might make the rice kind of...well, oily. Then again, I generally just stick it in the microwave or eat it cold!

In honor of the Chinese New Year here's a simple vegetable dish:

Veggie Stir-Fry
"Stir-frying is very quick, and helps retain the flavor of the vegetables. This is a recipe all vegetarians have to try! Fluffy white rice is the perfect complement to this dish." Original recipe yield: 4 servings.


INGREDIENTS:
1 teaspoon cornstarch
2 tablespoons water
1 tablespoon soy sauce
2 tablespoons olive oil
3 tablespoons vegetable oil
1 carrot, sliced
1 red bell pepper, chopped
1 zucchini, sliced
2/3 cup fresh corn kernels
1 clove crushed garlic
4 green onions, sliced
1 1/3 cups bean sprouts


DIRECTIONS:
Whisk together the cornstarch and water in a small bowl. Mix in the soy sauce and olive oil, and set aside.
Heat the vegetable oil in a skillet or wok over medium-high heat. Saute the carrot, pepper, and zucchini in oil for about 5 minutes. Stir in the corn, garlic, green onions, and bean sprouts. Pour in the soy sauce mixture. Cook and stir for about 5 minutes, or until vegetables are tender but crisp. Serve immediately.

Chicken fried rice is a healthy, one dish meal. Like all fried rice dishes, Chicken fried rice tastes best when using leftover cooked rice.

Makes 3 servings of chicken fried rice, or 4 - 6 as part of a meal


INGREDIENTS:
4 cups cold cooked rice
8 ounces cooked chicken (or substitute cooked turkey, etc.), chopped
2 eggs (more if desired)
1/2 cup green peas
1 medium onion, diced
1 green onion, diced
Seasonings (add according to taste):
Light Soy Sauce
Oyster sauce
Salt
Pepper
Oil for stir-frying, as needed

PREPARATION:
Beat the eggs lightly with chopsticks, add a dash of salt (Add a bit of oyster sauce if desired).

Chop the chicken meat and dice the onion and green onion.
Heat wok and add oil.

Stir-fry the onion on high heat for a few moments, remove and set aside. Do the same for the green peas.

Add oil, turn down the heat to medium and stir-fry the rice. Add the soy sauce, salt, pepper and oyster sauce. Add the chicken, onion and green peas and combine thoroughly. Serve chicken fried rice with the strips of egg on top and the green onion as a garnish. I'm great with leftovers. You don't re-fry the rice. it's way bad for you and will end up too greasy. You either throw a little water on it and microwave it, or do the same thing in a fry pan. I've done this with indian food, it works.
