I love cornbread - anyone have any recipes you want to share?

I know of one you probaly know about. Just add in corn, of course drain the juice from the corn and cook the normal way. I love cornbread with hamburger soup, or what some people call goolosh. Also I want the mexican cornbread recipe. :thumbsup:

this isn't a recipe, but I am hooked on Homemade Gourmet cornbread. It's a little expensive but I don't like any other now.

I like cornbread with crackling in it. (make it regular and add crackling)) I also like to take a hot pepper and dice it very very small add it to the batter and cook!! YUMMY. THe way I make cornbread is cornmeal, butter milk and one egg. Put a little oil in a black skillet and heat in the oven. Take out skillet pour hot oil into mixture stir and pour into skillet and bake. I think thats how most make cornbread.

AND BTW cornbread should not be sweet!!! ((((IMO!)))

This is the best cornbread I have ever tasted.

CORN BREAD CASSEROLE

1/4 pound butter, melted
1 (15 ounce) can whole kernel corn
1 (15 ounce) can creamed corn
1 (8.5 ounce) package corn bread mix
1 ounce sour cream

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a mixing bowl, combine butter, whole corn, cream corn, corn muffin mix and sour cream. Fold all ingredients together, pour into 2 quart casserole dish. Bake for 1 hour.

Mexican Bread...............Ingredients 1-1/2 cups self-rising corn meal 2/3 cup oil 1 cup buttermilk 3 eggs 1/2 cup chopped onions 1 cup grated hot pepper cheese 1 can cream-style corn Preheat oven to 375 degrees. Mix all ingredients together. Bake for 45 minute

Wolf, I have never seen hot pepper cheese, of course I've never looked for it either . Do most stores sell it ? I love mexican cornbread . And thanx for the recipe !!! :thumbsup:

I cook cornbread 2 or 3 times a week - it's a staple at my house! :) However, I don't have an actual recipe. I just sort of eyeball the ingredients until it looks right.

Racking my brain, here's what I came up with:

2 cups Martha White Self-Rising Corn Meal Mix
1 1/2 cups buttermilk or regular milk
1 egg
1 lg dollop mayonnaise
2 tablespoons sugar
1/4 cup oil or melted shortening + additional oil or melted shortening for cooking pan

Heat oven to 450 degrees F. Coat the bottom of a 9-inch ovenproof skillet or 9-inch square pan with oil or shortening (approx 2-3 tablespoons); place in oven to heat. This is what makes a good crust and is very, very important!

In large bowl, combine all ingredients; mix well. It looks like lumpy cake batter. Pour batter into hot, greased pan.

Bake at 450 degrees F. for 20 to 25 minutes or until golden brown. Usually I wait until there's cracks in the top of it and that's when I know it's done.

That's pretty much how I cook it. My husband loves cornbread and milk - he eats it like cold cereal. It's one of his favorite late night snacks!

One other thing - my family never cut cornbread into pieces. We'd always break off ever how much we wanted to eat. That drives my husband nuts. He insists on cutting it into perfect little wedges. It's just one of those oddities you learn about somebody when you live with them. :D

I don't think we get these Jiffy mixes in Canada - wish we had them.

SMC32......Hot Pepper Cheese.....I used to get it from a Little Mexican Store in Chicago,I can't find any here so I use Pepper Jack and put chilies in it......I should have put this with my Recipe.

I don't cook the greatest, but, I like that Marie Callendar, {Is that how you spell it}? Don't spell to good either !!! Hahaha!! It is really good. That mexican cornbread sounds fantastic, Wolf, Thanks ! I haven't heard of hot pepper cheese either, where can I purchase it, Do you know, Wolf ?
